Elevensies (got a late start this morning)
Ham & Cheese Frittata
- 2 whole eggs + 1 egg white, whisked until frothy; stir in 1 piece lean ham, diced; 1/4 cup shredded fat-free Cheddar cheese; salt & pepper to taste. Poured into a small, greased (olive oil–flavored non-stick cooking spray) round Pyrex bowl (the kind with a flat bottom and straight sides), baked at 425 approximately 15 minutes. Makes 2 servings.
Snack-size tub no-sugar-added diced peaches
Hot tea w/ lemon & Splenda
Exercise
1:30 p.m.—I just finished the 22 minute workout video Cardio Max, which features “Bob the Trainer” from The Biggest Loser. (I have access to it through On Demand with my cable subscription—here’s a preview of it.) Five minutes later, I’m still sweaty and my heart-rate hasn’t come all the way back down yet. The only move I couldn’t do was going from standing to bending down and putting my hands on the floor and walking my hands forward until in a push-up position, but I did at least attempt a downward-facing-dog yoga position while they were doing that.
Now, according to my Week 2 “Start Moving More” booklet, I would rate this workout as “high intensity” based on my answers to these questions:
Can You Talk? [Briefly]
Can You Sing? [No]
Is Your Breathing… [Rapid and Deep]
Are You Sweating? [After 3-5 Minutes]
Then I go to my points booster and find that at High Intensity, for 22 minutes, at my weight of 272, I earned (or burned!) 5 points!
Now I’m more than ready to collapse in the recliner with my laptop computer and finish the read-through of a manuscript for a content edit due Wednesday!

Dinner
Lamb shoulder chop
- sprayed with olive-oil cooking spray and sprinkled with oregano, sage, rosemary, salt & pepper. Roasted in the oven until on the medium side of medium rare.
Asparagus
- From frozen steam-in-bag—heated until just thawed then quickly sauteed with 1 tsp. olive oil and garlic.
Edamame
Dessert
Coffee with sugar-free Caramel flavoring and fat-free milk
- My quads and triceps are SORE! Guess that means I got a pretty good workout this afternoon!
